If you're intent on using fresh peaches for this recipe, but they're too tough, here's a trick: pre-bake them for a few minutes to soften them.

Do not overmix the batter! Otherwise your cobbler wouldn't be as fluffy.

Check the oven at the 25-minute mark. By that time, the cobbler should be forming a nice sauce. If not, you may have used dry peaches.

Directions
